About the Founder

Chris Ewing is a seasoned entrepreneur and the founder of Notty’s Italian Burrito, where he created a new portable Italian food category by wrapping classic flavors in a handheld format. 

He previously founded and led several successful tech and retail companies proving he’s just as comfortable in the boardroom as he is in the kitchen.

His mix of curiosity, creativity, and a little rebellious energy led to the invention of the air-fried Italian burrito that started it all.

Whether launching startups or perfecting dough recipes, Chris has a knack for turning fun ideas into real businesses people love.

The Original Notty's Girl

Katie is the original “Notty girl” and helped conceive the concept, shaping Notty’s into what it is today.

As an artist, she’s brought her own creative flair to make Notty’s a family-friendly, fun place to eat.

Originally from Canada, she moved to the U.S. to pursue her dreams and build a life in Sacramento.

Today, she’s still helping bring her vision to life at Notty’s as she often schedules kid-friendly activities that are a hit with Notty’s visitors.

From spaghetti on the go to an entirely new food category.

The Idea

While selling his software company, Chris started wondering why Italian food never made it into the fast-food lane. Who wouldn't love a bucket of spaghetti?

After his brother joked that you can’t eat spaghetti in the car, Chris took it as a personal challenge and went straight to the kitchen. He experimented with doughs, fillings, shapes, and cooking methods until he discovered the magic of air frying, eventually creating a lighter, crispier, perfectly handheld Italian burrito. After nearly two years of recipe testing, the first true Notty was born.

Simple Start

In 2021, to see if total strangers would love it as much as he did, Chris and Katie pulled their RV up to an airsoft event, put out a simple sign, and started selling. The response was immediate: 50 Nottys sold the first day and 75 the next. That weekend confirmed they had something deliciously different.

Let's Go!

With real demand behind them, they opened the first Notty’s in Zephyr Cove and expanded into Lincoln and Rocklin. The momentum keeps growing, fueled by partnerships with the Sacramento Kings where Notty’s is sold at Golden 1 Center during games, and with the Knight Monsters, serving fans at Tahoe Blue Arena. With franchising on the horizon, the dream of a nationwide Notty Empire is quickly becoming a reality.
